Tomatillo, Queen of Malinalco

When immature (green), the skin and seed are both very fruity, sweet and slightly tart, with notes of green pepper. When fully mature (yellow, dry husks), the skin gets insanely fruity with the same sweet and tart finish, while the seed tastes tastes a bit like cheese and raw bean, with notes of truffle. Depending how you feel about the seed's flavor, you may want to scoop it out as you would with peppers.
