Among the mildest and sweetest of chicories, Cicoria Rosa (lit. "rose chicory") are only slightly bitter (similar to that of Belgian endives) compared to its more common red/purple heads of chicories. The delightful pink shade tends to fade with high temperatures, so low heat or even serving fresh is recommended.
