The definitive collection of our winter squash varieties: KinderNut, Lodi, and Tetra Squash. All three share notes of charred, caramelized sweet potato and roast chestnuts unlike their commodity counterparts. The three diverge in their unique expressions: KinderNut delivers strongest butternut flavor; Lodi stands out in its browned-butter and almost meaty finish; Tetra's rich notes of pound cake and yeast reminds us how far it stands above the crowd of ordinary delicatas.
Their skin is not only thin and edible but desirable.
Sizing Notes
KinderNut Squash
Medium size is ~300-400g, ~4-5.5" tall each. Serves 2-3.
Mini size is ~160-240g, ~3-4" tall each. Serves 1-2. Recommended single-serve.
Lodi Squash
Medium size is ~260-330g, ~4" diameter each. Serves 2-3.
Mini size is ~180-240g, ~3" diameter each. Recommended single-serve.
Tetra Squash
~400-550g, 3.5-4.25" diameter.
Our Recommendation to taste test all squash flavor:
1. Slice lengthwise, scoop out all the seeds.
2. Lightly oil and salt. Neutral oils like canola, grape seed, or peanut work best.
3. Place the squash halves skin side down and roast for 35-45 minutes at 425 F, or until edges are slightly charred and the flesh is a deep golden brown. You should be able to spoon the flesh out smoothly all the way through the bottom of the squash.
