FORMERLY CALLED "STANDARD" AND "HAND-SIZED"
Commonly mistaken for shiso, Sesame leaf (perilla frutescens) is an entirely different plant whose unique flavor can best be described as herbal, earthy, and slightly minty. It contains notes of shiso but is far less floral. Primarily used in Korean cooking, it is a staple ingredient for Ssam (literally "wrap") which layers several other leafy greens with rice, protein, and a dollop of ssamjang, a soy bean paste condiment. It's also commonly pickled in soy sauce and garlic to be eaten with rice.
It is an ideal delivery mechanism for beef or tuna tartare, crudos, cooked proteins (especially heavily seasoned), or even grilled veggies both because of its unique flavor and 1-2 bite size as a wrap.
Sizing Guide:
Size 1: 1-bite for canapes, amuses, etc. ~3-3.5" tall and ~2.75" wide sub-palm size leaf.
Size 2: 2-bite for more filling. ~4-4.5 " tall and ~3.25" wide palm size leaf.
Size 3: 3-bite for hand-sized wrap, taco, etc. ~5-6" tall and ~4-4.5" wide sub-hand size leaf.
