Gazing at a whole field of classic blue borage on our farm evokes what Debussy might have envisioned while composing La Mer. We couldn't imagine a stronger inspiration for flowers that look like and taste like the sea.
Pick off the entrancing blue petals and you'll get stronger cucumber notes. Eat the whole flower along with the green calyx for a delightful aftertaste of oysters with cucumber notes and a slight nectary finish.
