Haji Shallot

Concentrated umami and sweetness that really comes through with heat. Contrary to its "green" version, these shallots' greens are allowed to die back, leaving the bulbs to mature. But much like the green version, its oniony flavor is balanced with sweetness and pungency. "Jokpa," literally translated "splitting onion" in Korean, begins as a single bulb in the ground that divides over several months, giving way to as many as 6-12 new plants similar to the way garlic splits.

Named after "Haji" (akin to "grandpapa, grampa, etc." in Korean), the Girls' and Dug's paternal grandpa and his discerning taste for all things onions, who also happened to take 26 years to reveal to Aaron's that the magic ingredient to the family's secret Kalbi marinade was a specific proportion of a select variety of onions, green onions, and garlic.
