A butternut squash worthy of its name: buttery, velvety texture for exceptionally smooth soups and purees ; deeply nutty on the nose like a chestnut; rich and "squashy" on the palate in a way that even compressing several normal butternut squashes couldn't match.
Sizing Notes
Medium size is ~300-400g, ~4-5.5" tall each. Serves 2-3.
Mini size is ~160-240g, ~3-4" tall each. Serves 1-2, recommended single-serve.
"Mixed" Squash contains mix of all sizes and is recommended for processing.
Our recommendation for the best taste test:
1. Slice lengthwise, scoop out all the seeds.
2. Lightly oil and salt. Neutral oils like canola, grape seed, or peanut work best.
3. Place the squash halves skin side down and roast for 35-45 minutes at 425 F, or until edges are slightly charred and the flesh is a deep golden brown. You should be able to spoon the flesh out smoothly all the way through the bottom of the squash.
