There's almost something "meaty" to how this instant Fall-classic hand-sized squash smells coming out of the oven. Resembling a "headless" KinderNut squash, Lodi is also extraordinarily nutty with less butternut flavor and much more of a pumpkin flavor. The thin skin an unexpected treat after roasting the squash at a high temperature while the creamy, velvety texture is starchy and never grainy.
Sizing Notes
Medium size is ~260-330g, ~4" diameter each. Serves 2-3.
Mini size is ~180-240g, ~3" diameter each. Recommended single-serve.
"Mixed" Squash contains mix of all sizes and is recommended for processing.
Our Recommendation to taste test Lodi Squash's flavor:
1. Slice lengthwise, scoop out all the seeds.
2. Lightly oil and salt. Neutral oils like canola, grape seed, or peanut work best.
3. Place the squash halves skin side down and roast for 35-45 minutes at 425 F, or until edges are slightly charred and the flesh is a deep golden brown. You should be able to spoon the flesh out smoothly all the way through the bottom of the squash.
