Currants pop with a burst of sweet and tart juice and have a very "wild berry" flavor. Depending on the color you may hit some of its bright and acidic notes (white, red varieties); sweeter, fruity notes (pink); or earthy, musky aroma (black). All colors are slightly earthy and have tannins that make everything from currant wines to satisfyingly tart pastries to muddling in cocktails.
Giant Clove Currants are much larger than their normal black currant cousins (see photo). They have slightly higher moisture content due to the larger size but retain the same classic black currant flavor and tartness with a hint of clove as their namesake suggests.
