Spanish Tarragon and Mexican Tarragon are both not really tarragons but marigolds. Sharing the same Latin name, the two also taste very similar, but Spanish tarragon grows into a woody bush and sports hardier, broader leaves. Due to their leaf structure, flavor, and relatively easier growth they are a fantastic replacement for French tarragon.
