Haji Shallot, Green

We harvest these when they're young enough for their leaves to remain tender and green, but the star of the show is the purple-tinged roots whose pungency is balanced with sweetness and never overpowers like onions do. "Jokpa," literally translated "splitting onion" in Korean, begins as a single bulb in the ground that divides over several months, giving way to as many as 6-12 new plants similar to the way garlic splits.

1 bunch = approximately 10-20 stems, depending on size, ~2/3 LB.
