Although it isn't technically a spinach, New Zealand "spinach" (Tetragonia) is an excellent sub or compliment to the tried and true traditional greens. Its succulent leaves give off a subtle sparkle in the right light and taste slightly salty and savory. The tender stems are edible as well and elevate the savory quality.
